Cakes

One Bowl Chocolate Cake

1-1/2c sugar                                                            1/2c oil
1-3/4 c flour                                                            1-1/2c milk
1/2c cocoa                                                              2 eggs
1-1/2 teaspoon soda                                               1 teaspoon vanilla
1 teaspoon salt

First add dry ingredients and mix, then add wet ingredients and beat for three minutes. Bake in 375 degrees F oven for 35 minutes. Frost with chocolate butter frosting.
 

Breads

Cinnamon Bread (makes 2 loaves)

1/2 c warm water                                                                  1/4 c sugar
1teaspoon sugar                                                                    1 teaspoon salt
1 pkg. yeast                                                                           2 eggs (beaten)
1-1/4c of milk                                                                       1/3 c sugar
1/4 c margarine                                                                     1-1/2 teaspoon cinnamon

Add warm water and 1teaspoon sugar into a large bowl, add yeast and let stand 10 min`s, then stir well
combine milk and margarine in a saucepan, on low heat. Melt the margarine then stir in 1/4 sugar and the salt. Add the liquid to the yeast mixture. add eggs and 1-1/2 cups flour. Beat until smooth and elastic (about 8 minutes). Place in a greased bowl, turning once, cover and let rise for one hour.
Combine 1/3 c sugar and cinnamon. punch dough down and divide dough in half, on a floured board, separately roll each half into a 12X8 rectangle, brush lightly with margarine and sprinkle with half the cinnamon mixture, roll tightly from the short side (like a jelly roll), seal the edges, then the ends and fold the ends underneath. Place loaf seam sides down, in a greased 9X5X3-loaf pan, repeat for other half. Cover both and let rise for one hour then bake in 350f oven for 30 minutes, remove from pan and cool on wire racks.
 

Pizza Dough

1c warm water
1 package yeast
2-1/2 to 3 c flour
2 tablespoons olive oil (or vegetable)
1/2 teaspoon salt

Mix water and yeast plus 1-1/2 cups of flour in a large bowl and mix well.
Add oil, salt and remaining flour until dough holds its shape mixing throughout.
Knead on floured surface (or in bowl) till elastic.
Cover and let rise for one hour.
This well give you one thick crust or two thin ones.

 

Waffles

2 eggs

2 cups all-purpose flour

1/2 cup vegetable oil, margarine or butter, melted

1 3/4 cups milk

1 tablespoon brown sugar

4 teaspoons baking powder

1/4 teaspoon salt

Heat waffle iron; beat eggs with hand beater in medium bowl until fluffy. Beat in remaining ingredients just until smooth. Pour batter from cup or pitcher onto center of hot waffle iron, bake about 5 minutes or until steaming stops. (Makes 12 4" waffles)

Leftover waffles freeze well, separate with wax paper

Cookies

Peanut Butter cookies

1c shortening
2c sugar
2 eggs
1-teaspoon vanilla
1 c peanut butter
2c flour
2 teaspoon Soda
1/2 teaspoon salt


Cream shortening, sugar, eggs, and vanilla
Stir in the peanut butter
add the dry ingredients and mix well
roll into balls and press them on a cookie sheet with a fork
bake in 350 oven for ten minutes
 

Frostings

Chocolate butter frosting

1/2c butter                                                1-1/2 teaspoon vanilla
1/8- teaspoon salt                                      3 squares unsweetened chocolate
3-1/2c icing sugar                                      2- tablespoon light cream or milk


In a small bowl, with mixer at medium speed, mix butter salt, and one cup icing sugar until light and fluffy. Blend in egg, vanilla, and chocolate. While beating gradually add sugar and enough cream to make frosting of spreading consistency.
 

Poultry

Garlic chicken Parmesan

1 large chicken breast sliced thin (before completely thawed)
3 cloves of garlic
1/2-teaspoon lemon pepper
1/8-teaspoon basil

Heat large cast frypan to medium heat, add 3 tablespoons margarine and simmer garlic till soft
add lemon pepper, thin chicken breast and continue simmering till the meat is done (lightly browned on both sides) remove to plate. Start water to boil with 1-teaspoon salt and 2 tablespoons oil, add pasta when it boils meantime..... Put 2-tablespoons butter in frypan, when melted add 2 tablespoons flour and make a smooth  paste, add one cup half & half cream and stir till thickened and bubbly, remove from heat, stir in 1/4c parmesan and set aside
    Your pasta is done so drain and place on plates, top with chicken mixture, cover with sauce and dress with basil, serve immediately.

Beef

Beef Stroganoff

1 1/2 pounds of beef boneless steak, about half inch thick

2 tablespoons margarine or butter

1 1/2 cups beef broth

2 tablespoons ketchup

1 teaspoon salt

1 small clove garlic, finely chopped

8-oZ mushrooms sliced

1 medium onion, chopped (about 1/2 cup)

3 tablespoons all-purpose flour

1 cup sour cream, or plain yogurt

Cut beef steak across the grain into strips, about 1/2 inch thick, cutting is easier if beef is partially frozen.

Cook beef in margarine in a 10-inch skillet over low heat until brown. Reserve 1/3 cup of the broth. Stir remaining broth, the ketchup, salt and garlic into skillet.

Heat to boiling; reduce heat, cover and let simmer about 10 minutes or until beef is tender.

Stir in mushrooms and onion. Cover and simmer about 5 minutes or until the onion is tender, Shake reserved broth and flour in a tightly covered container, gradually stir into beef mixture. Heat to boiling, stirring constantly. Boil and stir one minute; reduce heat. Stir in sour cream; heat until hot.

Serve over hot cooked noodles

Sauces

Basic white sauce

2 tablespoon margarine or butter
2 tablespoons flour
1/4-teaspoon salt
1/8-teaspoon pepper
1-cup milk

Heat butter in saucepan over medium heat until melted. Stir in flour, salt and pepper. Cook over medium heat until the mixture is smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.

 

Beverages

 

Irish Cream

1 cup rye

1 can eagle brand milk (sweetened condensed)

1 cup cereal cream

1 tbsp chocolate syrup

3 eggs

1/4 tsp coconut extract

Blend the rye and eagle brand milk together, then add the other ingredients.

Kahlua

3 cups sugar

4 tbsp instant coffee

3 cups water

1/4 tsp salt

4 tsp vanilla extract

26 oz vodka

Mix sugar, coffee, water, salt and vanilla. Boil, then simmer for 1 hour. Add the vodka.

 

Sambuca

3 cups sugar

3 cups water

1/4 tsp salt

1 tsp star anise (licorice type.) extract

26 oz vodka

Mix sugar, water, salt. Bring to a boil, then simmer for one hour. Add the vodka, then extract
